Tomato soup recipe~

With fall almost upon us I thought I would share my families favorite Tomato Soup Recipe. This recipe came to me as I was standing at my pantry LONGING for a cup Campbell's Cream of Tomato soup. Searching the pantry to no avail for my favorite can of soup, I came across the only tomato anything I could find~ A can of diced tomatoes. This recipe was born out of necessity and a growling tummy, it is now a FAVORITE in our home~

2 - 16 ounce cans of tomatoes. You can use whole, crushed, diced - whatever you have on hand. Puree 1 can at a time in your blender.

Pour tomato puree into a heavy sauce pan

Add half and half till the soup becomes pink. I use fat free half in half, You could also substitute the half and half with cream for a richer soup or milk to keep it on the light side. This is up to your own preference.

Heat over a low flame

Add crumbled Gorgonzola or any blue vein Cheese. Continue to heat until your desired temperature. This will serve 6 to 8 people

Serve with your favorite bread, cracker or with a grill cheese sandwich. It is quick, easy and oh so yummy

This is right up my alley! The air definitely has a chill in it up here in New England lately, and nothing works better to warm the bones than a hot bowl of tomato soup and grilled cheese....yumm:-).
Adding the cheese to the soup sounds delicious! Thanks for sharing.

one of my favorite comfie meals is grilled cheese/tomato soup. and with fall on it's way...i'm sure excited to have a new recipe to try!
