Girls the beets turn out so good.  Thank you all for your help!

We ended up roasting them (with the skin on) thank you Jana, Lisa and Mia for this tip.  They took about 50 minutes to become fork tender.  Once done we removed the skins and marinated them in a vinaigrette, Nicole thank you for your recipe.  I added a bit of balsamic vinegar to my vinaigrette- we like our beets nice and vinegary.

They were delicious!  Between the four of us we ate two entire bunches.  Fresh beets will no doubt be  standard on our vegetable night, so stop by any Monday and give them a taste!
